Sweet Banana Muffins
2 ripe medium bananas, peeled
1⁄3 cup vegetable oil + more for oiling
Toppings (optional): Top with prepared Caramel Sauce (icing variation; see recipe on pack). Finish with Cocoa Crunch Whole Food Topper or Tutti Fruity Whole Food Topper.
- Using a basting brush, generously oil two Muffin Makers.
- In a large bowl, mash bananas; they should measure about 3⁄4 cup. Add eggs and oil; whisk to mix. Stir in mix.
- Divide batter evenly into pans filling cavities.
- In two batches, microwave on high for 3 min. Rest in pan for 5 min; invert onto wire rack to cool. Or bake in preheated 375°F oven, 15–18 min. Cool in pan 10 min; unmold.
