Spicy Black Beans

Black beans are a great source of protein and fibre and you probably have a can or two in your pantry already! They’re a traditional Mexican ingredient that’s served as a side dish or in tacos, burritos, or enchiladas. If you like it extra spicy, don’t discard the jalapeno seeds. 


Ingredients
2 cans (540 ml/19 oz each)
low-sodium black beans
1
jalapeño
14 cup
water
2 tbsp
Chili SeasoningChili Seasoning
12
lime

Toppings (optional): chopped cilantro, sour cream, grated cheddar cheese

Preparation
  1. Drain and rinse beans. Slice jalapeno in half and discard seeds; dice jalapeno.
  2. Add beans, diced jalapeno, water, and seasoning to Sauté Pan over medium-high heat. Using 2-in-1 Citrus Press, squeeze in juice from lime. Bring to a simmer; stir occasionally, until most of the liquid is absorbed, about 5 min.  
  3. Add toppings, if desired.
Tips

Swap 2 tbsp Chili Seasoning for Chicken Barbacoa Seasoning. If you want something less spicy, try it with 2 tbsp Creamy Ranch Dip Mix.

Black beans are a great way to add extra protein and fibre to meals like tacos, rice bowls, burritos, and scrambled eggs.  

Much of the heat from a jalapeño pepper comes from the seeds. If you want a little extra heat, leave some of the seeds in when you dice it!

Perfectly Balance Your Plate

Serve with 12 cup rice and 2 cups leafy greens with 1 tbsp Epicure Dressing.
